If you're instrumenting a still, focus on the measurements that actually improve your spirit and safety. Here are the ones that matter.
Temperature
The workhorse. Track pot, vapour and condenser temperatures. Vapour temperature in particular tracks the progress of a run and helps guide cuts.
ABV (strength)
The strength coming off the still is the key signal for when to cut from heads to hearts to tails. Live ABV makes consistent cuts far easier.
Flow rate
Litres per hour at the spirit safe. Tells you how fast you're collecting and helps standardise run pace.
Pressure and power
Useful for safety and efficiency monitoring, especially on larger or automated systems.
Coolant in/out
Condenser efficiency and a safety check.
