Your still shapes your spirit. The two main types — and hybrids — suit different goals.
Pot stills
Batch-operated, simpler, and they retain more flavour and character. Favoured for whisky, brandy and characterful gin and rum. Lower final strength, so often run twice.
Column stills
Continuous, highly efficient, and produce high, clean strength. Favoured for vodka and neutral bases. Less congener carry-through means less "character".
Hybrids
A pot with a column attached gives flexibility — run it like a pot for character or engage plates for a cleaner, higher-strength spirit. Popular with versatile craft distilleries.
